Art Smith on Paula Deen Diagnosis: I Was Very Sad

Oprah's chef Art Smith faced the same medial issues as Food Network star chef Paula Deen and he didn't hide his feelings upon learning of her diagnosis.

"I was very sad," Smith said. "I love her very much. I think anyone who's diagnosed with a serious illness -- and I can put myself in that place -- you're afraid. My heart goes out to her."

ET was the first to get a look inside Smith's new restaurant Joanne, which he co-owns along with Lady Gaga's father Joe Germanotta, where the celebrity chef explained how he shared the same plight as Paula, having been diagnosed with diabetes shortly after his 50th birthday. Remarkably, he was able to reverse his diabetes symptoms thanks to a renewed diet plan that helped Smith lose over 100 lbs.

"I eat wonderful food, I just ate too much of it," Smith said. "I had to really get myself together. It was a difficult journey, but a worthwhile [one]."

- Serves 4

Joe Germanotta loves Chicken Scarpariello and this traditional dish has been enjoyed for many years at the Columbus Citizen’s Foundation. I have created a healthier and lighter version. Please enjoy but do not forget to eat your vegetables with it.

4 chicken breasts cut in half skin removed

½ cup low sodium chicken broth

½ cup pepperoncini with brine

4 tablespoons balsamic vinegar

2 cloves garlic thinly sliced

2 tablespoons chopped rosemary

1 tablespoon chili oil

Salt and freshly ground black pepper. In a medium sauté pan, heat the chili oil and sear the chicken 5 to 6 minutes per side. Once browned, add chicken broth, balsamic vinegar, pepperoncini and rosemary. Lower heat and reduce the sauce coating the chicken till cooked about 20 to 25 minutes. Serve with wilted Broccoli Rabe.
