Unlike previous couples who met on "The Bachelor" or "The Bachelorette," Jillian Harris and her new fiancé Ed Swiderski are plunging right in. Jillian is planning to move into Ed's Chicago apartment in September.

"For us, it was, 'Why not?'" Jillian says in an interview the morning after the "After the Final Rose" episode aired. "A lot of the reasons they haven't worked is a lot of people have done the long distance thing. They have tried to take it slow. We are madly in love. With our relationship, it is easiest when we are together. I would love to get back to my regular life and get back to work. I can't do that knowing eventually I will be out in Chicago."

Jillian says her parents are supportive of her, even though it means their daughter will be leaving Vancouver, but as "The Bachelorette" mentioned in an earlier interview, her parents want grandchildren. So how will they deal with them being half a continent away?

"Ed and I are going to talk about that one," she tells ET. "I may be secretly [figuring out] how I can get back to my neck of the woods, especially since my cousin Tori is getting married this summer and she is talking about having kids. We will be commuting back and forth a lot. My parents are retired. They are talking about getting a retirement home in the states. We are going to make it work."

Jillian was famous for her "hotdog theory" of dating. And now, she tells ET she is planning on writing a book about the subject, something cute and funny that will be a girl's guide to dissecting men.

So what toppings does Ed put on his dogs?

"I am a mustard guy -- 100 percent," he admits. And Jillian is okay with that now that she is engaged to him, adding, "My dad is a mustard guy, so it is a good sign." The Canadian cutie also says that she woke up the morning she had to make her final decision knowing that she was madly in love with Ed.

"I adored Kiptyn, and I didn't want to let him go, but I wanted to be with Ed," she says. "When Reid came back, his proposal and his feelings were so shocking and threw me for such a loop, it wasn't that I was confused and didn't know what to do. It was: How do I tell this person? What do I say? I am a very giving person. I want to make people happy. What can I say to make Reid walk away and feel good about himself? There was no way I was letting Ed go."

She adds that she was so sure that she was madly in love with Ed that if he did not reciprocate her feelings, she could not have been with anybody else. "I would have taken a lot of time to heal," she says. "I would not have opted for someone else. It was Ed or nothing."

Happily, Ed, once he heard that she loved him, dropped down on one knee and proposed. And he says that one of the reasons he fell in love with Jillian is her family.

"They are down-to-earth people," Ed says. "They are just regular people. They remind me of my parents -- very easy to get along with and very welcoming. It has been great."
